Karasev is a quintessential South Indian snack celebrated for its unique coarse texture and robust, spicy flavor. Unlike the fine, thin noodles of regular sev, Karasev has a thicker, more irregular shape, which contributes to its satisfying, crunchy bite.
The snack is traditionally prepared by combining chickpea flour (besan) and a small amount of rice flour, which gives it its signature crispness. The dough is intensely seasoned with a blend of spices that set it apart. The primary flavor comes from coarsely ground black pepper, which provides a bold, pungent heat.
