Description
Ragi Murukku is a modern and health-conscious take on the traditional Murukku, a popular spiral-shaped snack from South India. The defining feature of this snack is its main ingredient: ragi (finger millet) flour. Ragi is a superfood celebrated for its high content of calcium, iron, and fiber, making this snack a more nutritious alternative to those made with all-purpose flour.
The preparation process is similar to that of a traditional murukku. Ragi flour is combined with other flours like rice flour or gram flour to create a dough that is both pliable and capable of holding its shape. The dough is seasoned with a variety of spices to create a complex flavor profile. Common additions include red chili powder for a spicy kick, a hint of cumin or carom seeds (ajwain) for a distinct flavor, and a generous amount of asafoetida (hing) for its aromatic quality. A small amount of butter or ghee is also added to the dough to give the final product a light and crispy texture.
The dough is then pressed through a mold with a star-shaped or single-holed disc, forming the characteristic spirals that are the hallmark of Murukku. These spirals are carefully deep-fried in hot oil until they turn a deep reddish-brown and become perfectly crisp. The result is a savory, crunchy snack with a nutty undertone from the ragi, balanced by the heat of the spices. Ragi Murukku is not just a delicious snack but also a wholesome and guilt-free treat, perfect for enjoying with a cup of tea or coffee.
